I’m normally not a huge soup person, but lately I have been LOVING the butternut squash variety. I had a butternut squash in my fridge and decided to put it to good use and make some soup. I followed this recipe from Chow. I switched up a couple items, using nutmeg instead of sage, and only one squash instead of two. The minor changes still made for a delicious soup. It was on the sweeter side, so if you don’t want it too sweet I would suggest using only half of an apple.
